This DOP cheese made from raw cow's milk is a cornerstone of Italian cheese culture. It is crumbly and very aromatic. On a cheese platter, it provides a surprise; in the kitchen, it can be used similarly to Parmesan, especially for Alpine cuisine.
Grated, it is even easier to process than Parmesan alternative and a particularly aromatic ingredient for Sughi. The classic: Gnocchi with Castelmagnosauce.
