This bacon is flavored with spices from Tuscany, covered with salt, and sprinkled with wild herbs. Due to its tender consistency and mild flavor, it is a delicacy on unsalted white bread or very thinly sliced on crostini.

To obtain fine slices, it should be cut from the narrowest part of the piece and, of course, be cool.

 

For the adventurous, try wrapping it in chocolate. Jochen Slaby swore by it.

It can also be melted in a pan and then used for countless dishes.

Not just any bacon, but a true specialty made from the best layers of bacon from fully grown pigs.
