This process turns the pepper black, but not jet black; it has a rather pleasant deep brown hue. This method has enhanced the aroma significantly: the fully ripe peppercorns have developed a distinctly nutty flavor as well as a strong spiciness. This pepper is primarily used with dark meats such as game and beef, but also with chocolate desserts.
