These winter fine truffles are cooked in truffle juice with a bit of salt and can be used like fresh truffles. Cut into small pieces or shaved, they are perfect for making terrines, pâtés, sauces, or with fresh cheese. For sauces, they should be sautéed in a bit of olive oil beforehand.
