11.12.2023This sparkling wine made by Metodo Classico consists of the parcels “M” and “F” of the winery and the grape varieties “P” for Pinot Nero and “C” for Chardonnay.
The parcel “M” covers 0.6 hectares of Chardonnay, at 320 meters above sea level in a southwest location with a yellow clay, fairly deep soil, rich of organic matter, high mineral content, and subalkaline pH value.
The parcel “F” covers 0.4 hectares of Pinot Noir at 380 meters in weastern location with a yellow to red clay soil, high mineralization, and also a subalkaline pH value.
The grapes were spontaneously fermented in used wood after pressing and matured there for seven months. The blend of 60% Pinot Noir with 40% Chardonnay was made on 22.3.2019.
Afterwards, the sparkling wine rested on the lees for 56 months. It was disgorged “pas operé,” meaning exclusively with the same batch's own wine without the addition of dosage or anything else. No cold stabilization, filtration, or fining took place.
Tasting note:
Bright golden yellow with fine mousseux.
The MFPC Pas Operé shows similarly ripe notes on the nose as it already suggests in the color. It is a sparkling wine that recalls golden apples, which, together with vanilla, have found their way onto a warm puff pastry base. Alongside these inviting notes, which are well balanced, the wine also shows cool aspects. These include graphite, crushed stone, and a hint of nutshells, as well as lemon zest.
On the palate, the sparkling wine feels lively in the bubbles and expressive in the aroma. Here too, you find yellow apples, along with some notes of cellar and cider apples thanks to the slightly oxidative approach that Cà del Vént uses in the maturation of the base wine. The wine is intense, juicy, and yellow-toned with hints of red berries, lemon seeds, almonds, nuts, and stone; delicate and elegant.
