Venere is a whole grain rice with a natural black husk. It smells like fresh bread, is very nutritious, and rich in trace elements and protein. A few years ago, a Chinese expert succeeded in crossing this variety, originating from Asia, with local plants so that it can also thrive in our climate zone, specifically in Piedmont. Venere rice can be very well processed as risotto rice. Ideal with buffalo mozzarella. Complete the risotto with butter & Parmesan, place thick slices of mozzarella on top, and serve. The delicate lactic acid perfectly complements the nutty-salty risotto.
