12.01.2023This sparkling wine made by Metodo Classico is a single-varietal Chardonnay.
The parcels from which the wine originates are mainly southwest-facing at 360 to 430 meters above sea level with yellow to deep dark clay soils and white active limestone.
The grapes were spontaneously fermented in used wood after pressing and aged there for seven months. The Chardonnay assemblage took place in March 2019.
Afterwards, the sparkling wine rested on the lees for 46 months. It was disgorged “pas operé,” meaning only with the wine from the same batch without the addition of dosage or anything else. No cold stabilization, filtration, or fining took place. It was disgorged on 12.1.2023.
The color is medium golden yellow with fine mousseux.
From the nose, you can tell that the Pensiero Pas Operé is a Blanc de Blanc. It smells of lemons in various forms, from juice to zest to lemon cream. There is also a hint of vanilla, some coriander leaves and mint, along with graphite and stone, but also some warm aspects of wood, almonds, and ripe stone fruit.
On the palate, the Pensiero combines ripe autolysis notes with fresh citrus notes. Above all, these, together with the lively acidity and the dry character thanks to the lack of dosage, provide a pleasant lift. Initially, notes of almond croissants, a hint of vanilla, coriander seeds, and cider apples combined with a fine creaminess are at the forefront. Then the mouthfeel becomes increasingly chalky and piquant with a tart citrus and salty dominance.
