The Le Jour is a Champagner made from 100% Pinot Meunier. The fruit comes from the Premier-Cru single vineyard Le Jour in Vrigny. The vines, planted in 1971, grow on a clay-silt soil with a limestone subsoil. The base wine from the Cœur de Cuvée was spontaneously fermented and aged for nine months in four-year-old 228- and 400-liter barrels. A malolactic fermentation took place. The wine was not sulfited but disgorged as a Brut Nature .
