The freshly caught sardines from the Mediterranean are processed directly at the Pollastrini cannery in the port of Anzio near Rome. They are gutted and prepared by hand, fried, and then placed in the cans. On top comes a spicy tomato sauce made from a family recipe. Pollastrini is the only sardine can producer in Italy.
