The name of the winery originated from the marriage of Yves Pertois and Janine Moriset. Both come from old winemaker families of the Côte des Blancs. In 1951, the two decided to market Champagne under their own name in Mesnil-sur-Oger. Today, the winery is run in the third generation by the granddaughter Cécille and her husband Vincent. It now spans 12 hectares of Chardonnay-planted vineyard in the Côte des Blancs as well as 6.5 hectares of Pinot Noir and Chardonnay-planted vineyards in the Coteaux Sézannais. These vineyards are carefully tended, without adhering dogmatically to a philosophy. In 2009, significant investments were made in equipment, cuverie, and cellar technology. Today, precise temperature control prevents malolactic fermentation to capture the typical freshness of the Côte des Blancs.
