The wine is golden yellow and brilliant. Intensely aromatic and complex. With distinct hints of ripe fruits like white peach, combined with floral notes such as broom and pleasant toasted nuances from the barrique in the finish.

The taste is balanced with a clear mineral note and a persistent, spicy finish.

The Chardonnay vines, which are arranged in an east-west direction, are grown on a special area with sandy clay soil. The vineyard is managed with careful consideration of climatic conditions, thanks to the predominantly manual work of the team. The grapes obtained in this way reach perfect aromatic ripeness, allowing the production of a wine with character and a strong mineral component. 

Manual harvest based on uniform ripeness, followed by sorting of the grapes and then destemming. The grapes are cold macerated for about 48 hours before fermentation and then gently pressed. Fermentation and winemaking take place partly in steel tanks and partly in new French oak barriques. During aging, the wine matures for 6 months on the lees. Bottle aging for 6 months.

The owner, Katharina Börner, ensures that this will never lose its strength, as she leads the winery with great dedication, accompanied by the whole family.

In Velletri, she is supported by Paula Pacheco, who accompanies the work in the vineyard and in the olive groves, by Simone Sarnà, an oenologist in the wine cellar, and Claudio Gori, who advises her as an internationally recognized oenologist.
