The winery is located in Buxy, the southern gateway to the Côte Chalonnaise. History reports that the wines produced there have already given the monks of Cluny "fresh breath and clear ideas." Originally from the Mâconnais, Laurent Cognard bought his first parcels here in 1997 and settled down full-time in 2006 with 5.5 hectares as starting capital. Today, he cultivates almost 18 hectares of vines. Originally housed in the former medieval prison with picturesque and narrow cellars, the winery moved to the Château de Buxy in 2018. The winery values nature-friendly viticulture and has received the Terra Vitis certification for sustainable, environmentally friendly management starting from the 2020 harvest. In the cellar, Laurent respects the Burgundian tradition and adds a touch of modernity to it. The same applies to the aging, which is carried out in 500-liter barrels, a non-traditional format that particularly emphasizes the minerality of his white wines.
