This site is located on the left bank, between Montmains and Vaillons. The rows run up and down the slope, and there are three levels in the plot, which brings a certain complexity. The middle one is lighter in tone, and if you dig 20 cm, you find crispy shells. The top is less interesting as it has been mined. And the soil is colluvium: small stones from the river. This wine was aged 12 months in wood. Tight with some apple notes, it shows beautiful precision. Nice fruit here: very detailed, with a hint of mandarin.

Domaine Eleni & Edouard Vocoret

Domaine Eleni & Edouard Vocoret belongs to a new generation in Chablis and produces top wines that have been highly rated by various wine critics since their first vintage in 2013. She comes from Germany, studied Wine Business in Austria, and completed her winemaking training at the Jurtschitsch winery in the Kamptal.

Edouard comes from the 7th generation of Domaine Vocoret in Chablis, studied viticulture in France, and has been able to gain experience at various wineries in France. He was particularly influenced by the work of Daniel Barraud in Vergisson due to his "Low-Intervention" approach. Thus, he made the decision to choose a different working method than that of his family.

Eleni and Edouard met in 2010 during a harvest in New Zealand and then moved directly to Chablis together. After that, Eleni worked at Vincent Dauvissat and Edouard at his family winery Vocoret. In 2013, they took over four different vineyards with a total area of 4.89 ha from Edouard's family and founded a new winery.

Their vineyards are managed sustainably and artisanally. It is noteworthy that they ferment all wines spontaneously in stainless steel tanks and after fermentation, they age in old barrique barrels for about 12 months on the fine lees – whereas many large operations age their wines 100 percent in stainless steel. This gives their wines a certain salinity and a special structure.
