A blend of 50% Merlot and Cabernet Sauvignon.
Fermentation in temperature-controlled concrete tanks under bioprotection (avoiding sulfites). Cold maceration for 2 to 3 days before fermentation. Winemaking for 20 days. Gentle extraction through successive pumping over. Racking and decanting, followed by malolactic fermentation in concrete tanks.
Then 12 months in French oak barrels, 50% new barrels and 50% barrels previously used for a vintage

Caroline and Xavier Perromat officially took over the Château du Mayne in 2012, although the estate has been in the possession of the Perromat family for several generations. It was the first property acquired by Jean Perromat, who later became the chairman of the Syndicat des Vignerons de Cérons. The vineyard covers four hectares of vine area, surrounded by forests, and has a deep gravel soil over a layer of limestone rich in starfish fossils.
The wines reflect the smallest appellation of Bordeaux - Cérons, a subregion of Graves that also produces sweet Botrytis wines.
Before taking over the Château du Mayne, Xavier worked with his extended family on the vineyard, and Caroline worked at Château Haut-Bailly. The winemaking reflects their commitment to staying true to the tradition of Bordeaux and producing terroir-driven wines of great elegance and high value.
