13.03.2023This sparkling wine made by Metodo Classico is a single-varietal Chardonnay.
The parcels from which the wine originates are mainly southwest-facing at 360 to 430 meters above sea level with yellow to deep dark clay soils and white active limestone.
The grapes were spontaneously fermented in used wood after pressing and matured there for seven months. The Chardonnay assemblage took place on 30.3.2018.
Afterwards, the sparkling wine rested on the lees for 59 months. It was disgorged “pas operé,” meaning exclusively with the wine from the same batch without the addition of dosage or anything else. No cold stabilization, filtration, or fining took place. Disgorged on 13.3.2023.
Tasting note:
Bright golden yellow with fine mousseux.
The Blanc de Blanc Pas Operé combines the ripe notes that result from the long yeast aging with fresh notes. These mainly recall crushed limestone and chalk, lemon juice and zest, some bitter orange peel, grapefruit, almond croissants, and a little Manzanilla.
When the sparkling wine hits the palate, one involuntarily thinks of a long-aged Jura Chardonnay when enjoying the Blanc de Blanc, where a small amount of Vin Jaune has been integrated. Here, you find the deliberately oxidative notes of tart cider apples and walnuts combined with a fresh impression of citrus notes and a lively acidity that builds a lot of tension. There are also hints of salted lemons, some aged hard cheese, and bitter oranges. A deep, complex, mature, and at the same time incredibly agile and fresh sparkling wine.
