The Jules Bonnet is a Champagne made from 100% Pinot Noir. The fruit comes from four parcels of the terroir of Verzenay, classified as GrandCru, as well as from two parcels from the terroirs of Chamery, classified as PremierCru. The average age of the Sélection massale is 55 years. The vines root in gravelly and calcareous sands on a limestone substrate. The base wine from the Cœur de Cuvée was spontaneously fermented and aged for over nine months in barrels. Malolactic fermentation took place. The wine was not filtered and only lightly sulfured, resulting in a total sulfur of under 35 mg/l.
