The Domaine de Pallus in Chinon is another project by Bertrand Sourdais (Antidoto, Domino de Es). The vines are cultivated according to biodynamic guidelines. The soils of the parcels contain clay, limestone, sand, and tuffeau and are developed according to their unique soil structure. After fermentation, the wines mature for between 6 and 18 months in used barrels from Burgundy. After bottling, the wines continue to age in the bottle for several years before the winery releases them for sale.
