The winery's philosophy in the production of Il Rosato is to express the purity and freshness of the Nebbiolo grapes. The grapes are carefully harvested by hand and gently pressed to extract only the finest must. Fermentation takes place at low temperatures to preserve the delicate flavours and natural acidity. The wine is then matured for a short time in stainless steel tanks to preserve its freshness and vibrancy. In the glass it is a delicate, bright pink colour. The nose is dominated by a bouquet of fresh red berries such as strawberries and raspberries, accompanied by floral notes of roses and a hint of citrus fruit. On the palate, the wine is lively and harmonious, with a balanced acidity that emphasises the fruitiness and ensures a refreshing and persistent length.
