Limoncello according to the craftsmanship of Casalinga – tastes homemade.

Good acidity, not too sweet, pleasant bitter note, well-integrated alcohol. Made from the best lemons of the monastery garden, which covers only one hectare, whose fruits are harvested between February and June and then processed by hand.

Behind the monastery, almost everything is still handmade. The untreated fruits are harvested by hand. A self-built, old-fashioned machine carefully peels the skins from the lemons, which are then preserved and macerated. The result is a golden-yellow, natural liqueur with a wonderfully fruity taste. Refined with cream, it becomes a creamy lemon liqueur. This is also coated in chocolate by a chocolatier to create the delicious Limoncello praline filling.

Limoncello, with its fine acidity and citrus note, is an all-rounder for enhancing sweets. Pollios also work with a pastry chef who bakes Babà for them, small porous dessert cakes soaked in Limoncello and tasting wonderful with cream and fresh fruit.

Il Convento

Since 1935, the Pollio family has lived on the Sorrento Peninsula near Naples in a former Franciscan monastery. What makes it special is not only the apartment in the former sacristy of the church but also the old, one-hectare lemon garden behind the monastery – a Limonaia, as it is called in Italian.

The Pollios are a farming family like many in this region. First, they restored the overgrown garden to good condition and planted new trees. Originally, they only sold the fruit. But in 1995, Giuseppe Pollio, their grandson, had the idea to make Limoncello himself. Following an aunt’s recipe, 70 bottles were filled and offered as a trial at a small fair. They sold out on the first day.

The lemon variety Ovale di Sorrento IGP is a specialty with excellent gastronomic qualities. Its taste is particularly harmonious because the balance between acidity and sweetness is well balanced. It is also very juicy. The peel is rich in essential oils, which is the most important factor for the quality of the Limoncello.

The Pollios’ home, Massa Lubrense, is by the sea. The climate there is mostly mild. The trees grow on volcanic soil, and the fruits are protected from too much sun, rain, and wind by the pergola system. They hang in the shade under the leafy canopy. This creates almost paradisiacal green cloisters under the pergolas.
