Pecorino Romano P.D.O., produced in Sardinia, has a centuries-old tradition. It is aged and aromatic and is offered natural or with the typical dark Cappatura. It is a hard cheese of white or straw-yellow color, whose typical aroma recalls sheep's milk.
Its characteristic flavor is aromatic and slightly piquant for a table cheese; however, Pecorino Romano, intended for grating, is piquant, intense, and delicious thanks to longer aging.
