Thistledown
"Every wine tells a tale" is the guiding principle of Giles Cooke and Fergal Tynan. The two Masters of Wine share the vision of a more elegant, structured interpretation of Australian wine. With access to many of the best vineyards and Giles' experience in winemaking, Thistledown initially championed the old Grenache vineyards of South Australia and quickly earned a reputation as one of the best in the country in this category. Giles and Fergal met the evening before the start of the Master of Wine course in 1998 at a bar. At that time, both shared the frustration that Australian wine was considered heavy, alcoholic, and unsuitable for premium restaurants in many markets. Both knew this didn’t have to be the case and set out to create wines full of elegance, detail, and balance.
