In Nuits St. Georges, Yvan Dufouleur, the eldest son of Guy, and his uncle, Xavier Dufouleur, manage 30 hectares of vineyards in the 16th generation. Green manure and hand harvesting are practiced, and the work in the vineyard follows the principle of "lutte raisonnée," meaning with as little intervention as possible.
From Fixin in the north of the Côte de Nuits to Santenay in the south of the Côte de Beaune, the winery covers a wide range of appellations, especially diverse around Nuits-St-Georges. The wines are made in a site-typical and classically Burgundian style: bâtonnage, pigeage, and moderate use of new oak.
