Champagne from Chardonnay vines over 60 years old from the single vineyard Les Hauts Nemery in Avize, which has long been cultivated organically and biodynamically and farmed with horses. The base wine is spontaneously fermented in oak barrels and aged on the lees. It is topped up with 25% from a Reserve Perpetuelle.

Medium straw yellow with a relaxed mousseux.

de Sousa

De Sousa is a 10-hectare family-run estate in Avize in the heart of the Côte des Blancs.

The winery is currently managed by Erick Sousa in its second generation.

Since 1995, it has been farmed organically and biodynamically since 2002. The soil is partly plowed with horses. Sulfites in the Champagne are kept to a minimum, and the first fermentation takes place with natural yeasts.
