The cuvée, which varies year by year and is made from 7 grape varieties, is unfortunately quite complex. Because the wine requires a lot of explanation, especially if you have never had it in a glass before, it has not yet achieved the recognition in Germany that it deserves.
In the 2019 vintage, the hand harvest began on September 6 with the Merlot and ended on September 30 with the Petit Verdot.
After the completion of malolactic fermentation, the wine selected for Caiarossa is blended. It then matures for about 14 months in French oak barriques.
The different parcels and grape varieties are vinified separately in concrete tanks and wooden vats with slow fermentation and gentle extraction.
