This sparkling wine made using the Metodo Classico consists of the parcels "M" and "F" from the winery and the grape varieties "P" for Pinot Nero and "C" for Chardonnay.

The parcel "M" covers 0.6 hectares of Chardonnay, at 320 meters above sea level in a southwest-facing location with a yellow clay soil, quite deep, rich in organic matter, high in minerals, and with a subalkaline pH value.

The parcel "F" covers 0.4 hectares of Pinot Noir at 380 meters in a western location with a yellow to red clay soil, high mineral content, and also a subalkaline pH value.

The grapes were spontaneously fermented in used wood after pressing and aged there for seven months. For the rosé, we use 100% Pinot Noir grapes here.

Afterwards, the sparkling wine rested on the lees for 55 months. It was disgorged "pas operé," meaning only with the wine from the same batch without the addition of dosage or anything else. No cold stabilization, filtration, or fining took place.

House of the Wind

The Cà del Vént winery of Antonio Tornincasa and Flavio Faliva is located in Cellatica near Brescia in Lombardy. The place belongs not only to the red wine appellation Cellatica DOC but also to Franciacorta DOCG. However, from 2015 onwards, the two have refrained from labeling their sparkling wines as "Franciacorta." The self-image of the major producers, who considered the wines of Cà del Vént as not typical, was too far removed for them. Indeed, they are not typical, because here, on a clayey, loamy, and chalky crescent-shaped hill, completely different wines are produced than in the valley. With meticulous manual work, organic (biodynamic) farming, comparatively low yields, spontaneous fermentation, barrel aging, zero dosage, and long lees aging, these are sparkling wines with a depth and character that one had never before experienced in Franciacorta.
