Ben Ryé from Donnafugata pours into the glass a golden color with bright amber highlights. On the nose, its intense bouquet captivates, with notes of sultanas standing out: apricot and candied orange peel. Delicate hints of Mediterranean scrubland also emerge. On the palate, it offers its legendary and extraordinary freshness that balances the sweetness. Alongside the typical flavor of dried Zibibbo, numerous other fruity aromas of herbs and honey appear. Its complexity is enriched by mineral notes and a very long finish.

The harvest of the Zibibbo grapes intended for drying begins after August 15th. Before drying, the grapes are carefully cleaned. The natural drying process in the sun and wind on wooden racks lasts 3-4 weeks and is meant to concentrate sugars and aromas. After a second harvest in September, the must is made from fresh grapes, to which the hand-picked dried grapes are slowly added during fermentation (about 70-75 kg per 100 liters of must). During maceration, the dried grapes release sugar, freshness (organic acids), and all aromas into the must.
