These winter truffles are cooked with a bit of salt in truffle juice and can be used like fresh truffles. Cut into small pieces or shaved, they are perfect for making terrines, pâtés, sauces, or for fresh cheese. For sauces, they should be sautéed in a little olive oil beforehand.

Store in a cool, dry place.
