The addition "storico" refers to the breed of white working cows "Razza Modenese", which had nearly become extinct in the region but was re-bred due to its high meat quality. Appennino uses only this meat for its ragù, which is equivalent to the German term Bolognese sauce, as it is far tastier than regular beef.
