The variant without plastic not only protects the environment (no plastic and no refrigeration) but is also a bit cheaper and perhaps most importantly: in our opinion, it even tastes a little better. You just have to bring a bit of patience or plan ahead, as this version is only delivered fresh approximately every 4-5 weeks.
