L’Assemblage Brut is the calling card of the house Pertois-Moriset, which has been appreciated for generations for its precise, terroir-driven style from the Côte des Blancs and the Côte de Sézanne.

The cuvée combines equal parts Pinot Noir and Chardonnay from the chalky slopes of the Coteaux Sézannais – a region known for its deeper clay-chalk soils, natural cover crops in winter, and careful soil cultivation in summer. The base consists of 70–80% wines from a single vintage, complemented by 20–30% reserve wines that mature both in large oak barrels and stainless steel tanks, and are repeatedly topped up with the latest vintage.

This combination gives the Brut its characteristic balance of freshness, depth, and fine structure. After completed malolactic fermentation and at least 15 months of aging on the lees, L’Assemblage develops a clear, elegant profile with typical notes of light fruits, delicate citrus freshness, and subtle floral hints. On the palate, the champagne shows a delicate mousse, harmonious fruit, and a creamy yet lively character that perfectly captures the house’s signature. The length is supported by chalky minerality, typical of Sézanne, which adds tension to the wine.

L’Assemblage Brut is an ideal aperitif champagne and at the same time an excellent introduction to the style of Pertois-Moriset – fresh, precise, and with the elegant finesse for which this family winery is widely known.

Pertois-Moriset

The winery's name originated from the marriage of Yves Pertois and Janine Moriset. Both come from old winemaking families of the Côte des Blancs. In 1951, they decided to market Champagne under their own name in Mesnil-sur-Oger.

Today, the winery is run in the third generation by their granddaughter Cécille and her husband Vincent.

It now extends over 12 hectares of Chardonnay-planted vineyards in the Côte des Blancs, as well as 6.5 hectares of Pinot Noir and Chardonnay vineyards in the Coteaux Sézannais. These vineyards are carefully tended without strictly adhering to any particular philosophy.

In 2009, extensive investments were made in equipment, the cuverie, and cellar technology. Today, precise temperature control prevents malolactic fermentation to capture the typical freshness of the Côte des Blancs.
