954 m is the maximum height of Monte Cimo and the namesake of the outstanding Solaris wine.
It appears bright and evenly pale yellow, with greenish reflections. Its bouquet is incredibly rich, almost majestic, very aromatic and fruity. The intense aromas of floral scents, ripe fruits, herbs, and spices stand out and captivate the senses. One thinks of golden apple, boxwood blossoms, oregano, white pepper, and the typical sweet, ripe fruitiness of Solaris.
The taste is lively, mineral, with a remarkable acidity that overshadows the high alcohol content of 13.5%. It is also incredibly fresh, giving the impression of stone. This gives the Solaris grapes a unique territorial personality.
The aromatic notes are confirmed on the palate, showing its full body. In the aftertaste, alongside the mild memory of ripe fruits, there is a vegetal vein that fades into a pulpy fruit of ripe pineapple and golden apple. The finish is very long, accompanied by a diverse aromatic herbal blend.
When it reaches the right temperature, the sensations of glycerin and soft alcohols, as well as those of overripe yellow fruits, unfold. Notes of ripe fruits, pineapple, and quince emerge on the palate.
A powerful and not light wine, which will certainly undergo an interesting development over time and shows good aging potential.
The vineyards of Monte Cimo are located at 954 meters above sea level. This is the maximum height for the vines and makes Monte Cimo one of the highest vineyards in Italy. Here, temperature fluctuations between day and night are very strong. Thanks to the altitude, the wine gains great aromatic variety, freshness, and a very pleasant acidity. Nine hectares are dedicated to the resilient vines (Piwi), grown on rocky, mostly calcareous soils with a clay texture and high silicon content.
The pursuit of quality and sustainability begins in the vineyard and aims to find the best expression for each grape variety.
An important result that requires the greatest respect for the vine and the soil during the various processing phases. The value of the wine is deeply rooted in the terroir that nourishes and inspires it, giving it its uniqueness and dynamism.
The wines of Monte Cimo are mainly vinified and aged in temperature-controlled stainless steel tanks, the ideal containers to highlight the primary aromas of flowers and fruits. The temperature control of the steel tanks allows a slow and controlled fermentation to extract as many aromas and flavors as possible. The careful harvest is done by hand, and an initial selection of the grapes is made already in the vineyard. The freshly picked grapes are placed in 20 kg crates and stored directly in cooling rooms at 4°, preserving their full aromas and preparing them for gentle and slow pressing. Fermentation and aging take place in stainless steel for 10 months. The result is an outstanding white wine with a warm and convincing taste, in which the tones of ripe yellow fruits, supported by good acidity, emerge.
Bottle label: The labels of Monte Cimo are hand-designed by @giovannichiamenti and depict the flowers of the area that bloom spontaneously in the fields of Monte Baldo and are of rare beauty. The St. John's lily (Lilium Bulbiferum) represents the Solaris “954”.
