Chinotto is a classic Italian aperitif soda made from bitter oranges, which has been included by Slow Food in the Ark of Taste for particularly worthy foods for several years. Chinotto should not be cloyingly sweet but must have a refreshing and stimulating, slightly bitter and fruity quality. Chinotto is part of everyday Italian life almost as much as espresso and has regional specialties. The small bitter oranges from the Ligurian coast are especially aromatic.
