Domaine de Pallus: Chinon Pensees de Pallus AOP 2018

The Domaine de Pallus in Chinon is another project by Bertrand Sourdais (Antidoto, Domino de Es). The vines are cultivated according to biodynamic principles. The soils of the plots contain clay, limestone, sand, and tuffeau and are developed according to their unique soil structure. After fermentation, the wines mature for between 6 and 18 months in used Burgundy barrels. After bottling, the wines continue to age in the bottle for several years before the winery releases them for sale.
