Champagne from more than 60-year-old Chardonnay vines from the single vineyard Les Hauts Nemery in Avize, which has long been maintained organically and biodynamically and farmed with horses. The base wine is spontaneously fermented in oak barrels and aged on the lees. It is topped up with 25% of a Reserve Perpetuelle. Medium straw yellow with relaxed mousse.

De Sousa is a 10-hectare small family business in Avize in the heart of the Côte des Blancs.

The winery is currently run by Erick Sousa in the 2nd generation.

Since 1995, organic farming has been practiced and since 2002 biodynamic farming. The soil is partially plowed with horses. Sulfites in the champagne are kept as minimal as possible and the first fermentation takes place with natural yeasts.
