The term "storico" refers to the breed of white working cows "Razza Modenese," which was nearly extinct in the region but was bred again due to its high meat quality. Appennino uses only this meat for its ragù, which is equivalent to the German term Bolognese sauce, as it is by far more flavorful than regular beef.
