The champagne presents itself straw yellow with delicate apricot reflections and persistent perlage.
The nose oscillates between moderate autolysis and delicate citrus notes. Sourdough bread crust, salted hazelnuts, green almonds, and warm braided bread are underlined by citrus zest reminiscent of cedro, candied orange peel, and tart red cranberries. Additionally, distinctive saline notes evoke the sea immediately – including six oysters.
On the palate, the 2022 BORÉAL from Champagne Clandestin is immediately present with its rich, juicy fruit, resulting from the full ripeness of the 2022 vintage. Slightly red fruit notes, a creamy texture with fine bubbles, and a complex character generously outline it on the palate. In the finish, it appears more restrained, almost puristic – its ripe fruit meets a precise, gripping minerality.
A distinctive champagne that combines austere austerity with openness, while being both demanding and inviting.
