The cuvée, which changes year by year and consists of 7 grape varieties, is unfortunately already comparatively complicated. Because the wine therefore requires a lot of explanation, especially if you have never had it in a glass before, this wine still has not reached the distribution in Germany that it deserves.

In the 2019 vintage, the hand harvest began on September 6 with Merlot and ended on September 30 with Petit Verdot.

After the completion of malolactic fermentation, the wine selected for Caiarossa is blended. It then matures for about 14 months in French oak barriques.

The different parcels and grape varieties are vinified separately in concrete tanks and wooden casks with slow fermentation and gentle extraction.

Caiarossa

Caiarossa was founded in 1998 in the gentle hills of Riparbella on the Podere Serra All'Olio, a 100-hectare estate that has been owned by the De Medici family for centuries.

For millennia, wine has been produced in Tuscany, but Caiarossa has chosen from the very beginning to be different by pursuing biodynamic principles in partnership with the highest level of professional winemaking.

This aims to ensure the true expression of the character and vitality of this extraordinarily diverse and vibrant terroir.

Thanks to the tireless commitment and passion of the Albada Jelgersma family (also owners of Château Giscours in Bordeaux), the originally 12-hectare winery has grown over the years while carefully implementing the founding vision. Today, the entire Caiarossa estate encompasses 100 hectares, including 40 hectares of vineyards, 34 hectares of forest, 20 hectares of wildflower meadows, and 6 hectares of olive groves.
