The JulesBonnet is a Champagne made from 100% Pinot Noir. The fruit comes from four parcels of the Verzenay terroir, classified as GrandCru, as well as from two parcels from the Chamery terroirs, classified as PremierCru. The average age of the Sélection massale is 55 years. The vines root in gravelly and calcareous sands on a limestone subsoil. The base wine from the Cœur de Cuvée was spontaneously fermented and aged for nine months in barriques. A malolactic fermentation took place. The wine was not filtered and only lightly sulfited, resulting in a total sulfur content of under 35 mg/l.
