The well-marbled pork cheek is rubbed with sea salt and natural spices and matures in the air.

Unlike the much better-known Pancetta, the meat here is from the neck.

Whether in strips or cubes, the secret behind many Italian dishes.

Thanks to a higher fat content, the Guanciale is even more flavorful and is the core of a real Carbonara. There, cut into slightly larger cubes, after removing the skin, nicely fried and rendered in the pan, together with Pecorino, it is the star of the dish.

But it can also be used for other dishes like e.g. Spaghetti all'Amatriciana.

Genuss Gruber

The 2nd and 3rd generations of the Gruber family jointly maintain the tradition of smoked South Tyrolean meat specialties in the Stilfserjoch National Park. In their butcher shop in Prad, they butcher straw pigs, cattle, and game from the region and process them into Kaminwurzen, bacon, and ham. They use only natural spices and little salt in the preparation. The pieces are smoked over beech and juniper chips.
