A dressing made from Trebbiano white wine vinegar and concentrated grape must, containing less acidity than an Aceto Balsamico di Modena, that is under 6%. It has a delicate sweetness and its taste is reminiscent of its dark counterpart. Due to its light clarity, it can also be used well for light sauces, clear stocks, white meat, fish, and salads, while still providing the accent of a classic balsamic. Balsamico bianco is an elegant, subtle seasoning for preparations that have a delicate flavor and where the sweet-acid balance should be finely tuned.
