This PDO cheese made from raw cow's milk is a cornerstone of Italian cheese culture. It is crumbly and very flavorful. On a cheese platter, it provides a surprise; in the kitchen, it can be used similarly to Parmesan, especially in Alpine cuisine.
Grated, it is even easier to use than Parmesan as an alternative and a particularly aromatic ingredient for sauces. The classic: gnocchi with Castelmagno sauce.
