The Monte Cimo winery enjoys experimenting in the cellar every year. The latest experiment is called “Spontaneo”: thanks to the excellent health and quality of the grapes from the 2022 harvest, it was possible to forgo yeasts during the fermentation phase.

The “Spontaneo” is a unique blend of Incrocio Manzoni, Solaris (70%), and Muscaris. It was fully fermented in an amphora, without yeasts, additives, filtration, or oxidation. This spontaneous, natural wine appears in the glass slightly cloudy, golden yellow, and consistently high in quality.

This unique wine reveals the true essence of the grapes and the terroir where they grew. The “Spontaneo” presents a lively freshness, a light minerality, and subtle fruitiness. Every sip tells the story of the vineyard and the winemaker who created this exceptional wine with passion and dedication.

The intense nose reveals floral and herbal aromas, accompanied by notes of green apples, cardamom, citrus fruits, and white flowers.

The Monte Cimo vineyards are located at 954 meters above sea level. This is the maximum altitude for the vines and makes Monte Cimo one of the highest wineries in Italy. Here, the temperature fluctuations between day and night are very strong. Thanks to the altitude, the wine gains great aromatic diversity, freshness, and a very pleasant acidity. Nine hectares are dedicated to resilient vines (Piwi), grown on rocky, mostly calcareous soils with a clayey texture and high silicon content.

The pursuit of quality and sustainability begins in the vineyard and aims to find the best expression for each grape variety.
An important outcome that requires the utmost respect for the vine and the soil during the various processing stages. The value of the wine is deeply rooted in the terroir that nourishes and inspires it, giving it its uniqueness and dynamism.

The wines of Monte Cimo are mainly vinified and aged in temperature-controlled steel tanks, the ideal containers to highlight the primary aromas of flowers and fruits. The temperature control of the steel tanks allows for a slow and controlled fermentation to extract as many aromas and flavors as possible.

The careful harvest is done by hand, and an initial selection of the grapes is made right in the vineyard. The freshly picked grapes are placed in 20 kg crates and stored directly in cooling rooms at 4°C, preserving their full aromas and preparing them for gentle and slow pressing.

Terracotta amphorae are the ideal containers for wine storage at Monte Cimo. They allow micro-oxygenation without stripping the wine of its aromas, instead enhancing the varietal aromas. A perfect diapason for the soloists of the Solaris grapes. The result is outstanding white wines with a warm and convincing taste, where notes of ripe yellow fruits emerge, supported by good acidity.

The vines for the Spontaneo grow at an altitude of >900 meters above sea level; the soil consists of calcareous dolomite with a siliceous-clayey texture, rich in silicon. The Spontaneo spends its 9-month fermentation period exclusively in the amphora.

Bottle label: The labels of Monte Cimo are hand-designed by @giovannichiamenti and depict the flowers of the area that bloom spontaneously in the fields of Monte Baldo and are of rare beauty. The wild artichoke that blooms here represents the Spontaneo.

Monte Cimo

Monte Cimo is a young company founded in 2018 in Spiazzi, in the municipality of Caprino Veronese, on the slopes of Monte Baldo.

Francesco Chiamenti, who runs the company, has always been fascinated by the world of wine, having experimented with winemaking from the grapes of the small vineyard at his home since childhood with his father, a pediatrician, and his grandfather, a carpenter.

After studying oenology, he gained extensive experience in various fields, from biodynamic farms to large producers, with a clear mission: to challenge himself and create his own wine.

His wife Serena decided to follow Francesco after studying economics and marketing and gaining experience at a winery.
