The winery is located in Buxy, the southern gateway to the Côte Chalonnaise. History tells us that the wines produced there once gave the monks of Cluny "fresh breath and clear ideas." Originally from the Mâconnais, Laurent Cognard bought his first plots here in 1997 and settled full-time in 2006 with 5.5 hectares as starting capital. Today, he cultivates almost 18 hectares of vines. Originally housed in the former medieval prison with picturesque and narrow cellars, the winery moved to the Château de Buxy in 2018. The winery emphasizes natural viticulture and received the Terra Vitis certification for sustainable, environmentally friendly management starting with the 2020 harvest. In the cellar, Laurent respects Burgundian tradition and adds a touch of modernity. The same applies to the aging, which is done in 500-liter barrels, a non-traditional format that, for him, particularly highlights the minerality of his white wines.
