13.03.2023This sparkling wine made using the Metodo Classico is a single-varietal Pinot Noir.
The parcels from which the wine originates are mainly southwest-facing at 360 to 430 meters above sea level, with yellow to deep dark clay soils and white active limestone.
The grapes were spontaneously fermented in used wood after pressing and aged there for seven months. The Pinot assemblage took place on March 30, 2018. After that, the sparkling wine rested on the lees for 59 months.
It was disgorged “pas operé,” meaning exclusively with the same batch’s own wine without the addition of dosage or anything else. No cold stabilization, filtration, or fining was performed. Disgorgement took place on March 13, 2023.
The Blanc de Noir is deep golden yellow with fine mousse.
The Blanc de Noir Pas Operé offers a deep, elegant, indeed noble aroma of a matured Pinot sparkling wine, deliberately aged with the finest oxidation. It recalls the crust of sourdough bread, dried grapefruit peel, soft apricots, and red berries combined with a hint of Fino sherry and nuts.
On the palate, this eight-year-old Blanc de Noir has impressive depth, elegance, and finesse, where freshness, a clear, ripe acidity structure, and deep minerality and spice complement each other. Here again, you find distinct notes of sourdough, Fino, nuts, nutshells, and ripe cider apples and poiré pears. This is accompanied by herbaceous-fresh notes of grapefruit and bitter oranges. The sparkling wine has excellent length and, due to the long lees aging, a fine yet balanced presence of perlage and density.
