The Jules Bonnet is a Champagne made from 100% Pinot Noir. The fruit comes from four parcels in the terroir of Verzenay, classified as GrandCru, as well as two parcels from the terroirs of Chamery, classified as PremierCru. The average age of the Sélection massale is 55 years. The vines are rooted in gravelly and calcareous sands on a limestone subsoil. The base wine from the Cœur de Cuvée was spontaneously fermented and aged for nine months in barriques. A natural malolactic fermentation took place. The wine was not filtered and only lightly sulfited, resulting in a total sulfur content of under 35 mg/l.
