The fermentation of the Fiano grapes takes place in a steel tank, while the Chardonnay is fermented in new barriques.

The result is a multifaceted white wine that shows notes of tropical fruits, tea, sweet spices, and vanilla. The 6-month bottle aging perfects it in expression, complexity, and elegance.

Bocca di Lupo

Over twenty years ago, the Antinori family's dream began to produce top-quality wines from Apulia's native grape varieties, with Bocca di Lupo acting as the spark that ignited this dream and established its significance in the regional wine renaissance.

The winery is located in Minervino Murge, Castel del Monte DOC, known for its wild, pristine landscape. At an altitude of about 300 m above sea level, amidst the challenging climatic conditions of the Murgia, grape varieties such as Aglianico, Chardonnay, Cabernet Sauvignon, Fiano Pugliese, and Moscato Reale thrive here.

The Bocca di Lupo winery, nestled within 120 hectares of vineyards, features a fortress-like structure with bright white tuff stone walls. Here, oak barriques mature in a deep barrel cellar beneath a double barrel vault. On the terrace of the estate, there is a breathtaking view of the landscape, while the Vulture volcano stands watchful over the area to the west.
