The small Cailletier olive grows in the Alpes Maritimes region on the Côte d'Azur. It is aromatic with a slightly bitter note. Pickled with thyme and bay leaf, they are suitable, for example, for aperitifs, pizza, pissaladière, and Niçoise salad.
