Unlike the much better-known pancetta, the meat here comes from the neck.

Whether as strips or cubes, it is the secret behind many Italian dishes.

Thanks to a higher fat content, it is even more flavorful; guanciale is the heart of a true carbonara. There, cut into slightly larger cubes after removing the skin, nicely fried and rendered in the pan, together with Pecorino, it is the star of the dish.

But it can also be used for other dishes like spaghetti all'Amatriciana.

Ingredients: pork, salt, pepper, natural flavors, spices, sucrose, dextrose, antioxidant E301, preservatives E252, E250. Keep refrigerated.

The guanciale ranges from 800 g up to 1750 g. Please feel free to specify if you would prefer a smaller or larger piece.

As a sausage and ham factory, we specialize in the processing and preservation of ham, various sausages, and cooked products made from selected and genuine raw materials.

Production still follows the old family recipes of the Vasco Sassetti family.

Today, they are mainly known for processing pork and wild boar meat from Italian farms and for allergen- and gluten-free production of sausages with traditional flavors.
