We quote the definition from the 1930s, when Prof. Dalmasso described it as: “a unique wine, a luxury…” We decided to focus on this variety because we believe Pignolo has a strong personality with pronounced authenticity. It has a robust, very dry, and tannin-rich taste, although in less successful vintages it can seem rough and coarse (somewhat reflecting the character of the Friuli people).\u003c\/p\u003e\n\u003cp\u003eThe process involves fermentation in wooden vats with hand pressing, followed by 18 to 24 months of aging in small new oak barrels.
