Before drying, the grapes are carefully cleaned. The natural drying process in the sun and wind on wooden racks lasts 3-4 weeks and is meant to concentrate sugars and aromas. After a second harvest in September, the must is made from fresh grapes, to which the hand-picked dried grapes are slowly added during fermentation (about 70-75 kg per 100 liters of must).
